I posted a red pepper sauce I made earlier today via Instagram. I was originally trying to make roasted red pepper butter but ended up with a sauce instead. It was good anyway.
I thought I’d give you all the full recipe.
I had a pack of 4 red bell peppers that froze in the fridge so I figured I’d cut them up and try to roast them.
That being shared I removed the seeds and any ice they may have had inside of them.
the recipe
- slice peppers into strips. Any size you like
- heat a pan with oil. I used grapeseed oil and a bit of butter
- once your pan is heated fully add your peppers
- Saute them for a few minutes. I let them warm through before covering lightly with a lid.
- Add a few garlic cloves. I added about a handful. You can add what you like.
- Saute for a few minutes longer. You will see the garlic start to brown and the peppers will change color. depending on the paper you use it may lighten or darken. You’ll also notice the pepper scent with the roasted garlic.
- You can add any salt or pepper or spices to taste. I didn’t add any.
- Remove from heat.
While the peppers and garlic cool down you can prep your blenderor food processor. in my case Ninja Master Prep.
After the peppers and garlic have cooled you can add them to your blender/food processor or chopping device.
Once I had everything all added to my Ninja Master Prep I lightly pressed the peppers down with a spoon. I also added some butter. I just cubed a few pieces.
I added the lid and blended everything together for a few seconds. I let it rest for a few seconds to a minute while i went outside to pick some basil.
After washing my basil leaves (around 6 leaves) I lightly shreadded them and added them to my pepper mixture. I added a bit more butter.
Again I blended it again for a few more minutes. Once I saw everything was finally pureed I transferred it to a bowl.
My Instagram post was my final result.
I can say it was very good. I didn’t add any spices to it. The red bell peppers were a bit on the sweet size but it made a nice addition to my pasta lunch today.
Overall cooking time was quick. I would say about 20 minutes tops. This may depend on how cooked you’d liked your bell peppers and garlic. Since my bell peppers were sort of limp they cooked quickly.
