20 ml White miso syrup
1 Barspoon Rice Vinegar

The foam is milk, cream, egg yolk, sugar, seeds. It gives an initial hit of rich sweet sesame goodness. Then the mandarin hits with the crisp vinegar. The miso adds a savoury umami to carry the drink.
