50ml @fiftypoundsgin
25ml fresh lemon juice
15ml lavender syrup
3 dashes Peychaud’s bitters
La FΓ©e absinthe
Champagne

Shake top 4 ingredients with ice, strain into absinthe rinsed glass then top with champagne. Garnish with lemon peel and fresh lavender.
